In strainer, pour corn kernals & run cool water over to thaw. Put in serving bowl. Peel the avacado, remove pit, slice & dice. Add the diced red onion, red bell & jalepeno peppers. Squeeze the fresh lime to make at least 1/8 c., but closer to 1/4 is best, into corn mixture. Next add the freshly chopped cilantro to taste. Toss gently and sprinkle with Kosher salt. Chill until ready to serve. (*It is wise to use a plastic bag when cleaning & dicing jalepeno pepper, be careful not to touch your face before washing your hands thoroughly after dicing the peppers.)

Serve as a side, as a relish for hot dogs, brats or hamburgers. Great as a side for marinated grilled chicken breasts.
