15 ounce Tomato sauce

Slice aubergine and put on greased cookie sheet or possibly jelly pan, bake for 20 min at 400 degrees.

In frying pan, combine onion, garlic, mushrooms, pepper and salt, spices.

Simmer uncovered for 10 min.

Spoon on aubergine and top with cheese and sprinkle with parmesan.
