1 lb ground turkey

⅓ cup hoisin sauce
½ cup carrot, shredded
1 cup red bell pepper, chopped
1 medium cucumber, peeled, seeded, and chopped
½ cup green onion, chopped
8 large iceberg lettuce leaves, washed, separated, drained and chilled

In a large skillet, heat oil over medium heat.

Add ground turkey and ginger and cook 3 to 5 minutes or until turkey is no longer pink.

Add garlic and cook 30 seconds.

Stir in hoisin sauce and stir while cooking.

Add carrots and bell pepper and saute about 2 minutes.

Spoon hot turkey mixture onto each lettuce leaf, sprinkle with cucumber and scallions.
