in a very large pan melt butter and add the chorizo (removed from the casing) and the steak fry till they're almost cooked through

add in onions garlic peppers tomatoes and seasonings and cook about 5 minutes to soften

add rice to the mixture and stir it around getting it nice and coated in the mixture in the oan

add the broth and water and beans to the pan stirring well and cover cook on medium high till its boiling and stir again

cover and cook for about 20 minutes on medium low heat checking occasionally so as not to burn the rice

when the rice looks done add the grated cheese to the top recover and blast the heat on high for about 10 seconds then turn the stove off and walk away.

don't move the pan from the eye and no peeking

after about 10 minutes get a spoon and a plate and dish up some of your mexican dirty rice goodness
