Apricot-Mustard Glazed Pork Chops (Bone-In)

   Season pork with salt and pepper.

   In skillet, heat olive oil over medium-high heat; add chops and onion.

   Cook 3-6 minutes; turn and cook an additional 3-6 minutes.

   Meanwhile, in a small microwave-safe bowl combine preserves, mustard, 1/4 cup water, paprika, and nutmeg.

   Heat in microwave for 1 minute or until melted.

   Pour over pork in skillet.

   Reduce heat to medium.

   Cook, covered, 10 minutes or until pork is cooked through.
