Apple Spice Muffins

   In saucepan, combine raisins and water.

   Simmer for about 10 minutes or until raisins are plump.

   With slotted spoon, remove raisins from liquid.

   Save 1 1/2 cups of liquid.

   To this, add the baking soda and mix together. Set aside to cool.

   In a bowl, combine sugar and oil.

   Add applesauce and raisin liquid.

   Add dry ingredients and raisins.

   Mix well. Batter will be thinner than most muffin batter.

    Bake in a preheated 350u00b0 oven for 20 to 25 minutes or until done.
