Apple Rosettes

   Preheat oven to 350 degrees

   Wash and core apples

   Slice as thin as possible

   Add lemon juice and sugar to apple slices in a microwave safe bowl

   Place a bowl into the microwave for 3 minutes until apples are soft but not mushy. Drain liquid before using.

   Place apricot jam into the microwave for 1 minute until liquid and easily spreadable

   Place puff pastry on a flowered surface and roll a thin sheet

   Cut it into 6 individual strips approximately 11x3

   Spread apricot jam on each strip and sprinkle with cinnamon

    Place apple slices (drain liquid)one next to each other so that they slightly overlap

    Fold dough in half

    Roll tightly until apple rosette is formed. Pinch the end to hold it.

    Place apple rosettes into a greased muffin pan

    Bake for 30 minutes, rotating once

    Dust with powdered sugar and enjoy!
