1. Fill your fryer with oil according to manufacturer's instructions. Preheat your fryer to 365 F.

2. In a large bowl sift together your flour, baking powder, salt and granulated sugar. Mix in your vanilla extract, buttermilk and egg. Beat together until it is nice and smooth. Fold in your chopped apple (this batter should be on the thicker side not runny).

3. Drop batter by the tablespoon-sized scoop into the hot oil (I used a small ice cream scoop). The fritters will turn dark brown when they are finished; this only takes 2-3 minutes. Remove them from the oil using a kitchen spider or slotted spoon. Drain on paper towels, and roll into the powdered sugar while the fritters are still warm.
