Preheat oven to 375.

In a large bowl, combine the flour, white sugar, brwon sugar and cinnamon and salt. cut in butter with a pastry cutter or fingers, just until it begins to cling together. Just past the crumbly stage. you can save extra in the refrigerator or freezer, and make individual crisps in ramekin cups.

Prepare the fillin in a 4 quart bowl. Slice the apples too think and the apples will collapse into apple sauce.

Toss the apples with sugar-nutmeg-flour mixture, then mix well. Place the apples into a lightly buttered baking dish. Cover the top of theapples with the crumb mixture.

Cover the crisp with first parchment paper and the aluminum foil. Bake for 20 minutes. Remove the foil and parchment paper. Bake for an additional 30 to 40 minutes.
