In a saucepan, heat 1/2 cup of milk until lukewarm. Remove from the heat and stir in the yeast and 1 tbsp sugar. Cover and allow to rest for 10 mins.

In a bowl, mix the flours, 3 tbsp sugar and a pinch of salt. Make a well in the center and add the yeast milk, egg and 2 tbsp butter. Knead with the dough hook of a mixer to a smooth dough. Cover and allow to rest in a warm place for 30 mins.

Preheat the oven to 400u00b0F. Line a baking sheet with parchment paper. In a saucepan, melt 2 tbsp butter. On a floured work surface, knead the dough again and roll out to a 12 x 10 inch rectangle. Brush with the melted butter and sprinkle with the brown sugar, cinnamon and apple. Roll up from one long side and cut into 12 slices. Bake for 15-20 mins, until browned.

Heat a pan and toast the almonds until golden brown. Allow to cool. In a blender, puree the quark, vanilla extract, marzipan and 3 tbsp milk. Stir in the almonds. Serve the cinnamon rolls warm or cold with the marzipan quark.
