Ingredients: 4 Apples - Red Delicious -peeled and cut in small squares; 1 cup Carrots - ground; 1/2 cup Pecans - chopped; 1/2 cup Raisins; 1/4 cup canned Red Cherries - drained; 1/4 cup canned Green Cherries - drained; 1/3 cup dried Coconut; 2/3 cup Mexican Cream - as needed; Mini Marshmallows - to taste.; 1 tablespoon Light Mayonnaise; Fresh Lime and Orange Juice (as needed)

4 Apples - Red Delicious -peeled and cut in small squares
1 cup Carrots - ground
1/2 cup Pecans - chopped
1/2 cup Raisins
1/4 cup canned Red Cherries - drained
1/4 cup canned Green Cherries - drained
1/3 cup dried Coconut
2/3 cup Mexican Cream - as needed
Mini Marshmallows - to taste.
1 tablespoon Light Mayonnaise
Fresh Lime and Orange Juice (as needed)

While preparing for this recipe, you may want to set everything at hand and leave the peeling of the apples for last, as they darken very easily. Once ready to begin, peel and cut each apple set aside in a big bowl and cover it with lime juice, to stop it from darken. Add carrots, pecans, raisins, coconut, and cherries. Cover with orange juice, making sure all the fruit and grains are soaked in it. Add mayonnaise and cream and stir until all fruit is covered. (the Mayo helps the cream stay with the fruit and not leak as much from it.) Chill! Minutes before serving, add the as many mini masrshmallows as your taste can handle! Love it! It's as great a salad as it is a desert!

Note:If Mexican Cream cannot be found, a good substitute may be sour cream, but it will slightly change the taste of this sweet salad. You can also substitute Red with Golden Delicious, or any other sweet and firm kind of apple. (One that doesn't crumble when diced.)
