Preheat the oven to 400u00b0F. Line a 12-cup muffin pan with paper liners.

Mix the flour and the sugar in a large bowl. Whisk 5 tbsp of the melted butter, the buttermilk and the egg in a medium bowl. Add to the flour and sugar. Stir until just combined (don't over-mix). Fold in the carrot, apple and dates. Spoon the batter into prepared muffin pan.

Bake for 20-25 mins or until a toothpick inserted into the center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack.

Sift the powdered sugar into a medium bowl. Stir in remaining 2 tbsp melted butter and enough juice to make a smooth icing. Spread the orange icing on the top of the cooled muffins. Let stand until icing is set.
