Anchovies In Vinegar

   Clean the anchovies and remove their spines. Slice open the bellies and open them up like a butterfly. Remove their spines but leave the tails on.

   Place the anchovies in a shallow dish, open side up, and cover them with the vinegar, water, and salt. Refrigerate uncovered for 2 hours.

   After 2 hours, the fish should be white and cooked in the vinegar.

   To store them, place a drizzle of olive oil between each layer.

   Serve with diced garlic and parsley on top.
