AMIEs PASTA with Sausage & Spicy Tomatoe Sauce

   Bring a large pot of water to a boil.

   Add a tablespoon of salt and a splash of oil.

   Cook the pasta according to the packet directions, until al dente.

   Drain and return to the pan.

   Heat the oil in a medium, heavy-based sauce pan over low-medium heat.

   Add the onion and garlic, and saute until softened.

   Increase the heat to medium.

   Add the sausage meat, stirring to break up, and cook for 10 minutes, until browned.

   Pour in the wine and cook until reduced by half.

    Add the tomato and chilli, and bring to a boil.

    Decrease the heat to low and gently simmer for 15-20 minutes, until flavours have developed.

    Season with salt and pepper.

    Add to the pasta and toss to combine.
