Preheat the oven to 180AsC (360AsF).

Lightly grease a 25-cm (10-in) round cake pan and line the base with baking paper.

Combine all dry ingredients; flour, sugar, baking powder and salt in a large bowl, mixing well until well combined.

Mix eggs, oil, and water with coffee, stirring thoroughly in another bowl.

Pour dry ingredients into the liquid mixture; mix well until well incorporated and smooth.

In a separate bowl, whisk the egg white and sugar until stiff peaks form.

Gradually pour in the egg white mixture in the mixed ingredients, having a final stir, mixing thoroughly to combine.

Pour into the prepared pan and bake in the oven for 45 minutes, until golden brown and well risen.

Set aside to cool.

Split cake into 2 layers and fill with mocha icing before frosting.

Cover and frost with mocha icing.

MOCHA Icing: Beat egg yolks slightly.

Blend sugar and milk.

Cook over low fire stirring constantly until mixture coats the spoon.

Cool.

Cream butter and add egg yolk mixture gradually then blend in cacao and instant coffee.
