1.Mix goat cheese and cream cheese in mixer with the paddle attachment until smooth. Add sour cream and continue to mix. Add egg, making sure it incorporates. Fold in remaining ingredients and mix well.

2.Pour into graham-cracker-lined springform pan and bake at 325 degrees for 45 minutes to 1 hour. (Use the knife test to check if it is done.) Cool overnight. (The cheesecake must cool and set before it can be served.)

Mix all crust ingredients together and push into the bottom of a 9-inch springform pan.

4.Note: This recipe can be changed up a little by leaving out the amaretto and swirling in raspberry puree (or another flavor). If you do this, fill the pan with half the mixture. Drop small rounds of the puree onto the mixture. Add the rest and swirl with a knife.
