Put any vegetable oil about 2 tablespoon in a pan which has heavy base.

Add finely chopped onion in it.

Let onion be caramalised, after it becomes soft pink add one teaspoon chilli powder, quarter teaspoon turmeric and about quarter teaspoon salt in the pan.

Let it cook for 2 minutes.

Now add 1 medium size potato chopped in small cubes and chopped tomatoes to the pan.

Let it cook for about 10-15 minutes and cover the pan while cooking.

While cooking stirr the mixture once or twice.

After the potatoes become soft and tomatoes get squishy, add chopped spinach into the pan and put the pan on high heat.

Cook for about 2 mins and stirr the mixture and take the pan out of stove.

Now serve the sabzi with roti or rice.
