Combine yeast and 2 tbsp sugar. Heat 1/2 cup milk until lukewarm then mix with flour, salt, whole eggs and yeast-sugar mixer. Knead until smooth, cover and leave in a warm place for 1 hour to proof.

Preheat oven to 400u00b0F. Knead dough again then transfer to a greased 8 inch casserole dish, gently pushing it up the edges. Place pears on top and sprinkle with 1/4 cup sugar and almonds. Sprinkle with cubed butter and let rest for 10 mins then bake for 40-45 mins until golden brown.

For the custard, mix 1/2 cup cold milk and cornstarch then transfer to a pan over medium heat. Add remaining sugar, milk, vanilla extract and cream, bring to a boil then remove from heat and quickly whisk in egg yolks. Place over low heat and cook until thick, stirring constantly. Can be served hot or cold with pear pudding.
