Lightly roll out pastry on floured surface to 10 1/2 x 10-inch rectangle. Cut the pastry in half, then roll one half into a neatly trimmed 10 x 4 3/4-inch rectangle and place on a baking pan. Spread the jam in the center. Place the almond filling on the pastry, leaving a 3/4-inch border around the edge.

Roll the remaining pastry into a neatly trimmed 10 1/2 x 5-inch rectangle and fold in half lengthwise. Brush the pastry on both sides with the egg white. Cut through the folded edge of the pastry at 3/4-inch intervals leaving a 3/4-inch border down the long side of the pastry strip.

Brush around the edge of the pastry strip on the baking pan with egg white. Carefully unfold the cut pastry strip and place over the almond filling. Press the edges of the pastry together using your thumb and the back of a knife to make a decorative edge. Brush evenly with egg white and sprinkle with sugar.

Bake for 5 mins. Reduce the oven temperature to 400u00b0F and bake for a further 10 mins or until golden brown. Serve.
