In a bowl, mix the flour, sugar, salt, vanilla extract, baking powder and almonds. Add the butter and 1/2 cup of buttermilk. Knead the mixture with the dough hook of a stand mixer to make a smooth dough. Place in the refrigerator for 15 mins then allow the dough to rest for 30 mins at room temperature.

Preheat the oven to 350u00b0F. Knead the dough well on a floured surface then roll to a thickness of 3/4 inch. Cut the dough into circles with a 2 inch diameter cookie cutter and place on sheet tray lined with parchment paper. Brush with 2 tbsp of buttermilk and bake for 12-14 mins. Remove and leave to cool on a wire rack. Serve lukewarm with butter and jam.
