Alfredo's Southwestern Potato Soup

   Preheat oven to 400 degrees.

   Toss potatoes with vegetable oil and Taco Seasoning.

   Roast potatoes for 30 minute tossing once halfway thru.

   In 4-6 quart sauce pan, cook bacon till crisp, remove bacon, drain and reserve.

   Drain all but 1 - 1/2 tbls.

   bacon grease.

   Add green onions and saute 1 minute until soft.

   Add flour and whisk 1-2 minute.

   Add 1 cup milk and whisk until slightly thickened, 1-3 minute.

    Add Alfredo sauce and stir to combine.

    Add potatoes and reserved bacon and stir.

    Add balance of milk to desired consistency, reduce heat, cover & simmer 10 minutes.

    Serve with green onion tops as garnish.
