To make, blend crust ingredients (first 9 listed) in a food processor, adding water until it comes together. Stop and check consistency every 10 seconds - if you pinch it and it stays together, it's ready! Place into a standard pie dish, spread with fingers, and blind bake for 20 minutes at 180'C.

Meanwhile prepare filling. Place the filling ingredients in the food processor and blend until smooth and lump-free. Add water as needed: the more you add, the lighter the pie filling will be. Taste and adjust flavours to your liking.

Once ready, spread onto the baked pie crust and bake for 20-25 minutes at 180'C. Serve immediately, or allow to cool in the fridge overnight before serving with chilled coconut cream and fresh fruit, or maple syrup if you feel the need for more sweetness.
