Ingredients: 4 tablespoons butter; ⅓ cup extra virgin olive oil; 1 large onion, diced; 1 fresh jalapeno, chopped (with or without seeds); 4 garlic cloves, chopped very fine; 2 carrots, sliced; 6 celery ribs, sliced; 1 lb boneless skinless chicken breast, chopped finely; ½ teaspoon cumin, powered; 1 teaspoon salt; 1 teaspoon chili powder; ½ cup flour; 1 (14 ounce) can stewed tomatoes; 4 teaspoons chicken bouillon cubes; 6 -7 fresh cilantro stems, coarsely chopped; 2 tablespoons lime juice; tortilla chips, slightly crushed; sour cream, a dollop; muenster cheese, shredded

4 tablespoons butter

Heat Butter and oil in a large pot until butter is melted.

Saute onion, jalapeno, garlic, carrots, celery and chicken; simmer 5 minutes.

Add cumin, salt, chili powder, lemon pepper and flour.

Stir to blend.

Add tomatoes and chicken broth.

Simmer for 1 hour.
