3 Cheese Soup

   Add all the cheeses into a large microwave safe bowl. In 45 second intervals heat and melt the cheese in the microwave. Stir well between each interval.

   In a Dutch oven or similar pot with a lid add light cream, whole milk, black pepper and nutmeg and stir gently to combine. Using a spatula add melted cheese (yes it will be gooey) and stir to combine. Cook on low heat for 12-15 minutes, stirring occasionally. Garnish with fresh chopped parsley, if desired.

   I love this with homemade seasoned croutons. If you love cheese and love soup, you should try this. The flavor combination is a winner and it is super easy to make. Also a great lunch option.
