1 onion, diced
6 medium zucchini, quartered lengthwise and sliced 1/2 inch thick
3 cups chopped spinach
1 teaspoon salt
½ teaspoon ground pepper
2 (6 ounce) boxes chicken flavor stuffing mix
1 cup plain yogurt
1 cup chicken broth
2 cups cheddar cheese, shredded

Heat oil and butter in a 12-inch skillet over medium high heat.

Add onion and cook until softened.

Toss in the zucchini and cover, cook until the zucchini is softened, stir occasionally.

Wilt in a handful of spinach at a time.
