1/2 cups Shredded Coconut, Plus Extra For Topping
1 Tablespoon Grated Lemon Rind
3/4 cups Caster Sugar
4-1/4 ounces, weight Butter, Melted

3/4 cups Milk

4-1/4 ounces, weight Cream Cheese, Softened
2 Tablespoons Butter
1 Tablespoon Grated Lemon Rind
1/2 teaspoons Lemon Juice

Combine flour, coconut, rind, sugar, butter, eggs and milk in a large bowl and mix well with a wooden spoon until smooth.
