Preheat oven to 400F.

Lay out 6 wonton wrappers on waxed paper.

Spray one side with nonstick spray, or brush with extra virgin olive oil.

Place wrappers oil-side down into the cups of a muffin pan.

Dont flatten them too much, or they wont form the cup shape to hold the meat mixture.

Place muffin pan in the oven for about 7 to 10 minutes to get the cups crispy enough to hold the meat.

Meanwhile, brown up the hamburger, adding the onion and green pepper early to cook through.

Spice up the meat with salt and pepper if you like.

I like to sprinkle it with cumin and crushed red pepper flakes as well.

Once the meat is done, drain it to get out as much moisture as you can.

In a mixing bowl, add the hamburger mixture, and just enough salsa to make the mix moist and add flavor.

You dont want to overdo it, or the wontons might soak up the moisture.

If you crisp up the wontons really well, sogginess shouldnt be a problem.

Once the wontons are crisp, remove from the oven and sprinkle a little shredded cheese in the bottom.

Turn your oven down to about 350F.

Add a scoop of hamburger mixture to each cup, then top with more shredded cheese.

Place the muffin pan back into the oven for a few minutes to warm the meat and melt the cheese on top.

You can serve these with guacamole, cilantro, and sour cream, but they are a flavorful handful by themselves.

There are endless possibilities for add-on ingredients and spices: shredded chicken and salsa verde, hamburger with a little marinara and mozzerella cheese on top, etc.
