1/4 c. onion, chopped
1/2 tsp. celery salt
1 (4 oz.) can sliced mushrooms
1 can cream of chicken soup
1/4 c. Parmesan cheese
2 c. white rice, cooked
1/2 tsp. pimiento, chopped
2 c. chicken, cooked and cubed
1 large can evaporated milk
1/2 c. sharp Cheddar cheese, grated
1/4 tsp. pepper

Drain mushrooms, saving liquid.

Melt butter in saucepan. Saute onion.

Add seasoning and mushroom liquid.

Blend in chicken soup and stir until smooth.

Gradually add milk, stirring until smooth and thickened.

In large bowl, mix rice, mushrooms, pimiento and cubed chicken.

Pour into buttered casserole.
