Start the sauce first.

Put the onion, garlic and oregano into the food processor and blitz until very finely chopped.

Heat the butter and oil in deep pan and add the onion mix.

Cook over a low heat for 10 minutes or so until soft.

Add the passata and water to the pan with the sugar, salt and pepper and leave to simmer for 10 minutes while you make the meatballs.

Put all the meatball ingredients into a bowl and mix together using your hands.

Shape into small balls (around a heaped teaspoon each).

Add the milk to the sauce and then drop the meatballs inches.

Don't stir them until they've turned brown.

Cook for 20 minutes, check the seasoning and serve over pasta.
