Preheat oven to 400 degrees Fahrenheit.

First start by sauteing the minced bell peppers in the olive oil. After about 2 minutes, throw in the garlic and cook for an additional minute. Then throw in the frozen corn and cook until tender. Season with salt, pepper, sugar and thyme.

Keeping on medium heat, slowly stir in the cream and stir for about 3 minutes, or until it starts to thicken. Take off heat and stir in the cream cheese and the tablespoon of butter until evenly distributed and starting to melt.

Pour mixture into a casserole dish and sprinkle with parmesan cheese. Go ahead and a little more if you like-I always do! Bake for 15- 20 minutes until bubbling and the cheese is starting to brown. Take out and enjoy! This goes great with any entree.
