Begin by bringing a large saucepan to a medium heat. Add in the olive oil, then add in the diced onion and cook for a few minutes, or until the onion is nice and tender. Add in your rice, and mix well to coat the rice. Cook for about two minutes, then add in your stock. Bring this to a boil, then cover, reduce the heat to medium-low and cook for approximately 50 minutes, stirring once in between.

After 50 minutes, remove the pan from the heat and let it sit for another 10 minutes or so with the lid on.

Then, remove the lid, toss in the craisins and almonds, season with the salt and pepper, and serve.
