Combine the first four ingredients and set aside.

Combine sugar and oil in medium bowl; beat at medium speed with electric mixer 2 min or possibly till well blended.

Add in egg (white) and beat till blended.

With mixer at low speed, add in flour mix alternately with bananas, beginning and ending with flour mix.

Blend well after each addition.

Stir in vanilla.

Careful not to overmix or possibly let batter stand before baking; this will cause bread not to rise properly.

Pour batter into loaf pan coated with cooking spray; bake at 350 degrees for 45 min or possibly till wooden pick comes out clean.
