Heat together milk, salt, honey and butter until tiny bubbles begin to form around edge.

In a large bowl, mix the yeast and lukewarm water.

Add the milk mixture and stir. Add the whole wheat flour and stir. Stir in enough white flour to make a stiff dough that begins to leave the sides of the bowl as you stir. Turn onto a well floured board or oil cloth and knead until dough no longer sticks to your hands.

Add additional flour as you knead to prevent sticking.

Knead until dough springs back when pressed. Place in greased bowl and turn so that all surfaces are greased. Cover with clean cloth and let rise in warm place until doubled, about 45 minutes.
