Preheat oven to 350u00b0F. Grease a 7x11 inch rimmed baking tray.

To make the filling, combine dates, 3/4 cup water, lemon zest and lemon juice in a saucepan. Cook, stirring constantly, until thick and smooth. Let cool to room temperature.

Meanwhile, sift flour into a large bowl. Cut in butter until mixture resembles coarse breadcrumbs. Whisk together honey, egg and milk then add to dry ingredients and mix until just combined. Transfer to a lightly floured work surface and knead until smooth. Cover and chill for 30 mins.

Divide dough into 2 portions. Roll 1/2 of dough out then use to line base of prepared pan. Spread cooled filling over top. Roll out remaining pastry and use to cover filling. Brush with a little extra milk or water and sprinkle with sugar. Bake for about 25 mins. Let cool in pan before cutting.
