Ingredients: 3 cans white beans; 1 tablespoon vegetable oil; 2 pounds chicken breast halves, boneless, skinless cut into 1inch cubes; 1 medium onions diced; 4 cloves garlic; 1 package white corn frozen; 2 teaspoons cumin; 1/2 teaspoon oregano; 1 can green chili peppers; 1 1/2 cups chicken broth; 1 each limes juice of; 1 cup monterey jack cheese grated; 1/2 cup cilantro chopped

3 cans white beans
1 tablespoon vegetable oil
2 pounds chicken breast halves, boneless, skinless cut into 1inch cubes
1 medium onions diced
4 cloves garlic
1 package white corn frozen
2 teaspoons cumin
1/2 teaspoon oregano
1 can green chili peppers
1 1/2 cups chicken broth
1 each limes juice of
1 cup monterey jack cheese grated
1/2 cup cilantro chopped

Place beans and their liquid in a large pot over low heat.

Heat the oil in a skillet and saute the onion and garlic until golden.

Add the chicken and saute until lightly browned.

Stir the chicken mixture into the bean pot along with corn, cumin, oregano, green chilies and chicken broth.

Simmer uncovered 30 minutes.

Add 1 cup of grated Monterey Jack cheese stir until melted, and well blended.

Just before serving, stir in lime juice and cilantro.

Serve, if desired, with garnishes such as chopped red onion, additional grated Monterey Jack cheese, dollop of sour cream, and garnished with salsa of choice.
