Preheat oven to 350 degrees and line two sheet pans with parchment paper.

In a large bowl, or bowl of a mixer, combine the butter, salt, cinnamon, and cloves. Mix until the spices are evenly distributed.

Gradually mix in the light brown sugar, stopping to scrape down the sides of the bowl and the beater. Add the eggs and mix until completely incorporated. Then gradually add the oats, once again stopping to scrape down the sides and bottom of the bowl.

In a separate bowl, combine the flour and baking soda. Then, beginning with the flour mixture, alternate adding 1/3 of the flour with 1/3 of the buttermilk until all ingredients have been added.

Fold in the chocolate chips or raisins with a spatula. Using a cookie dough scoop, or large spoon, scoop out dough onto parchment lined baking sheets, leaving about 1.5 inches between each cookie.

Bake for 12-14 minutes until golden. Allow cookies to cool 5 minutes on the sheet pan before transferring to a cooling rack.
