Place the strawberries in a medium bowl. Heat the vin santo, honey and sugar in a small saucepan until the sugar dissolves. Pour over the strawberries. Let stand for 10 minutes.

For the zabaglione, beat egg yolks, sugar, balsamic vinegar and vin santo in medium bowl over a medium saucepan of barely simmering water with an electric mixer on medium speed for 5-10 mins or until light and fluffy. (Be careful water doesn't boil too fast or eggs will scramble. Take bowl off the saucepan for 10 seconds, if it gets too hot. Return the bowl to the saucepan, turning down the heat in the process. Use a tea towel to hold bowl when whisking, as it can get warm.)

Divide strawberries among serving glasses and top with zabaglione. Serve with ladyfingers, if desired.
