Ingredients: 1 red onion, cut in half and very thinly sliced; 1 tablespoon sherry wine vinegar; ¼ cup fresh flat-leaf parsley, roughly chopped; 4 tomatoes, roughly chopped; 2 teaspoons capers, drained; 250 g cooked lentils (or use canned, as I did); 2 tablespoons extra virgin olive oil; 8 slices serrano ham; 2 cooked chicken breasts, torn into pieces; 100 g baby arugula
