Ingredients: 2 cups cooked lentil; 2 apples; 1 sweet potato; 1 beetroot; 1/2 cup almonds; 2 tablespoons hemp seeds; 2-3 handfuls arugula; 2+1 tablespoons olive oil; 1 lime or lemon, juice; 1/2 orange, juice; 1 tablespoon mustard; 1 clove of garlic; salt; pepper; smoked paprika

2 cups cooked lentil
2 apples
1 sweet potato
1 beetroot
1/2 cup almonds
2 tablespoons hemp seeds
2-3 handfuls arugula
2+1 tablespoons olive oil
1 lime or lemon, juice
1/2 orange, juice
1 tablespoon mustard
1 clove of garlic
salt
pepper
smoked paprika

Preheat oven to 200u00b0C. Cut the sweet potato and beet into bite size pieces, place on a baking tray, season with salt, pepper and paprika and drizzle with a bit of olive oil. Bake for about 40 minutes.

Cook your lentils or if you use canned ones, warm them up a bit in a sauce pan.

For the dressing mix together a juice of a lime and a half orange, olive oil, mustard, maple syrup, a crushed garlic and some salt and pepper.
