Cover noodles with cold water in a large bowl. Let stand for 5 mins. Heat a grill pan on high heat or preheat the grill to medium-high. Lightly brush steak with oil. Grill for 3-4 mins each side, or until cooked to desired doneness. Transfer to a platter. Let stand, loosely covered with foil, for 5 mins.

For the dressing, combine chili pepper, lime juice, fish sauce and 1/4 cup water in a small bowl. Add sugar to taste. Set aside.

Cook bok choy in saucepan of boiling salted water for 2 mins, until tender but still crisp. Remove and drain. Drain noodles and add to hot water in saucepan. Remove from heat and set aside for 3 mins. Drain thoroughly.

Cut steak across grain into thin slices. Toss noodles with dressing, bok choy, cilantro and beef. Serve with lime slices.
