1. Preheat oven to 350 F.

2. Place rolled-out pie crust dough in a lightly buttered pie dish. Set aside.

3. Sift together sugar, flour and salt in a small bowl.

4. In a separate bowl, whisk together eggs, butter and half-and-half. Add sugar mixture and stir well. Add apple cider vinegar and stir vigorously with a wooden spoon until thick and smooth. Pour filling into crust.

5. Place pie on the bottom rack of the oven. Bake for 10 minutes at 350 F. Reduce heat to 325 F and bake until edges rise and center is fairly firm, about 35 to 45 minutes. Place on a cooling rack and serve at room temperature.
