Vince'S Pizza Dough

   1. Pour 3/4 c. warm water into the bowl of a stand mixer. Add flour, mix with a dough hook until combined, cover, and let stand for 20 minutes.

   2. While flour mixture is resting, combine remaining 1/4 c. water and yeast in a small bowl. Let stand until bubbly.

   3. Add yeast mixture, oil and 1/2 tsp. salt to flour mixture. Mix with a dough hook on low speed for five minutes or until soft dough forms. You may need to scrape the sides of the bowl once or twice during the mixing.

   Place dough in a large bowl coated with cooking spray. Cover with plastic wrap. Put in the refrigerator for 24 hours.

   5. Cut dough in half. If freezing, wrap in plastic wrap, then in foil and place it in a freezer bag.
