Coarsely chop half each of the basil and mint. Place whole basil and mint leaves in a bowl. Set aside.

Place the chopped herbs, lime peel, ground beef, egg and curry paste in a large bowl. Using your hands, mix until well combined. Shape into 12 patties. Place on a plate. Cover with plastic wrap; refrigerate for 15 mins.

Meanwhile, soak noodles in hot water in a large heatproof bowl for 3-5 mins or until softened. Drain. Using kitchen scissors, snip noodles into short lengths. Add onion, carrot and bean sprouts. Whisk sauces and lime juice in a small bowl.

Spray patties with no stick cooking spray. Heat a large skillet on medium heat. Cook patties in batches for 2-3 mins each side or until browned and cooked through.
