Ingredients: 450 grams gluten-free / plain flour - see my flour mix below; 2 tsp baking powder; 1/2 tsp xanthan gum if using gluten-free flour; 1 tsp garlic powder; 3/4 tsp low-sodium salt; 1 tsp dried oregano; 1 tsp dried basil; 1 pinch chilli powder; 360 ml sparkling (carbonated) water; 2 tbsp olive oil; 2 tbsp maple syrup

1/2 tsp xanthan gum if using gluten-free flour
1 tsp garlic powder
3/4 tsp low-sodium salt
1 tsp dried oregano
1 tsp dried basil
1 pinch chilli powder
360 ml sparkling (carbonated) water
2 tbsp olive oil
2 tbsp maple syrup

Preheat the oven to gas 7 / 210C / 425F and line 2 baking sheets with parchment paper

Mix the flour, baking powder, xanthan gum if using, salt, herbs and spices together well in a bowl

Make a well in the middle and pour in the oil and syrup

The dough should be like a thick cake batter so mix in the water until it reaches that stage.

Spoon the mixture into a piping bag

Snip a 1cm wide end and pipe wiggly lines, spaced evenly apart along each baking sheet, then bake for 18 - 22 minutes or until done
