Ingredients: 8 tender venison chops, 1/2 inch thick; 2 sm. onions, minced fine; 1 stick butter; 8 med. mushrooms, sliced; 2 tbsp. chopped fresh parsley; 1/4 teaspoon salt; 1/4 teaspoon fresh grnd black pepper; Heavy aluminum foil; 8 slices cool boiled ham; 8 tbsp. lowfat sour cream

Servings: persons

8 tender venison chops, 1/2 inch thick
2 sm. onions, minced fine
1 stick butter
8 med. mushrooms, sliced
2 tbsp. chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon fresh grnd black pepper
Heavy aluminum foil
8 slices cool boiled ham
8 tbsp. lowfat sour cream

Heat 1/2 butter in large heavy skillet and saute/fry the chops for 10 min.

Transfer to a heated plate and keep hot.

Heat remaining butter in skillet and saute/fry onions, mushrooms and parsley till golden brown.

Salt and pepper.

Turn off heat and prepare foil packets.

Cut 8 pcs of foil, each 10 x 14 inches.

On each piece, place in center one piece of ham; top with a venison chop.

Add in a generous Tbsp.

Place in 350 degree oven for 20 min.
