Veal With Capers Recipe

   Coat the veal cutlets in 1/3 c. flour, salt and pepper.

   In frying pan heat 1 Tbsp.

   of butter and 1 Tbsp.

   extra virgin olive oil.

   Cook veal for 1 minute on each side.

   Then transfer veal to warming dish.

   In the same pan, add in 2 Tbsp.

   butter, 2 Tbsp.

   lemon juice, 1/4 c. chicken broth and cook 1 minute.

    Then add in 1 Tbsp.

    capers and 1 Tbsp.

    minced parsley.

    Mix together and serve over veal.
