1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
3 tablespoons butter or 3 tablespoons margarine, divided
1 tablespoon extra virgin olive oil
1/2 cup dry white wine
3 tablespoons lemon juice
2 tablespoons parsley, chopped
1 large garlic clove, pressed
2 tablespoons capers

Pound veal (or chicken or pork) until flattened to 1/4 inch thickness.
