Wrap potatoes with foil paper after washing thoroughly and bake for approximately 1-2 hrs or until cooked on 400.

Once cooked, divide potatoes in half and scoop out the center and place in a mixing bowl leaving a little to hold the skin together.

The smoke sausage must be diced and sauteed .

Rinse the cooked crawfish tails well.

Add in smoke sausage, crawfish tails, green onions, and sour cream to the potatoes in the bowl.

Prior to restuffing the potato skin shells, slice the cheese and place a couple of the strips at the bottom of the shell.

Once the shell has been stuffed, garnish the potato with the fresh bacon bits and a couple of more cheese strips.

Place the potatoes back in the oven for approximately 20-25 minutes or until baked.

Then it's ready to serve. Best served with Cesar Salad.
