2 teaspoon vegetable oil
1 1/2 tbsp. chopped shallots or possibly onions

1/3 c. defatted chicken stock
1 tbsp. cider or possibly wine vinegar

1 tbsp. minced dry apricots
1 tbsp. currants
1 teaspoon minced fresh mint or possibly 1/4 teaspoon dry mint

Combine flour, 1/4 tsp.

Dredge turkey lightly in flour mix.

Heat oil in a non-stick skillet over medium high heat.

Add in turkey and cook for 2 to 3 min per side, or possibly till golden brown on the outside and no longer pink inside.
