Ingredients: 3 tablespoons olive oil; 8 cremini mushrooms, chopped; 8 shiitake mushrooms, chopped; 1 shallot, chopped; salt, to taste; pepper, to taste; 1 13 lbs ground turkey; 3 -4 sprigs fresh sage, chopped (about 2 tablespoons); 1 tablespoon Worcestershire sauce; ½ cup Italian seasoned breadcrumbs; 1 egg, beaten

Servings: persons

3 tablespoons olive oil
8 cremini mushrooms, chopped
8 shiitake mushrooms, chopped
1 shallot, chopped
salt, to taste
pepper, to taste
1 13 lbs ground turkey
3 -4 sprigs fresh sage, chopped (about 2 tablespoons)
1 tablespoon Worcestershire sauce

Heat a non-stick skillet over med-hi heat.

Add 2 tablespoons olive oil, then chopped mushrooms & shallots & season with salt & pepper.

Saute 5 or 6 minutes, until dark & tender.

Remove from heat, transfer to a bowl.

Place turkey in a mixing bowl.

Make a well in the center of the meat.

Add remaining ingredients & mushroom/shallot saute.

Mix together.

Form into oval patties, 1 inch thick.

Heat 1 tablespoon olive oil over med-hi heat in pan, add patties & cook 6 minutes on each side.
